Ik wilde iets makkelijks en gezonds eten en was dit recept eerder tegengekomen op internet. Groenten, eieren en wat kaas; prima maaltje. Omdat het daarnaast vrij snel klaar te maken is vond ik het wel een goede om te gaan maken.
Ik heb de verhoudingen van de ingrediënten wat aangepast en de paprika vervangen door tomaat, wat ik beter vind passen bij spinazie, en ben aan de slag gegaan.
Het was een lekker receptje wat zeker voor herhaling vatbaar is.

Ingrediënten
200 gr spinazie
5 eieren
6 cherrytomaatjes
3 el geraspte Parmazaanse kaas
2 el (geroosterde) pijnboompitten
1 el Italiaanse kruiden
Bereiding
- Verwarm de oven voor op 200 graden.
- Verhit wat (kokos)olie in een pan en bak de spinazie hierin tot deze voor een groot gedeelte geslonken is. Schep af en toe om. Zodra de spinazie klaar is zet je het vuur uit.
- Kluts ondertussen de eieren en een halve el Italiaanse kruiden in een kommetje en voeg hier eventueel nog wat peper aan toe. Halveer vervolgens de cherrytomaatjes.
- Verhit wat (kokos)olie in een koekenpan en bak hierin achtereenvolgens twee omeletten van het eimengsel.
- Meng de spinazie, cherrytomaatjes, pijnboompitten en de overgebleven Italiaanse kruiden door elkaar.
- Leg wat van het spinaziemengsel in de omeletten en rol deze op. De rest van het spinaziemengsel leg je in een ovenschaal. Leg daar bovenop de omeletten, verdeel hier de geraspte Parmazaanse kaas overheen en plaats in de oven voor circa 15 minuten.
