Zo’n twee jaar geleden was ik op vakantie in Florida, een vriend van me werkte daar voor een jaar en we hadden vooraf al afgesproken dat ik hem daar op zou komen zoeken.

Na een week in zijn plaats St. Petersburg te zijn geweest (leuke, levendige stad), een feestweekend in Miami (drunkness & memoryloss) en een week op een cruise langs allerlei mooie, tropische plekken (o.a. Belize, Mexico en Isla Roatan) was het weer tijd om naar huis te gaan.

Toen we in Miami het vliegtuig wilden pakken bleek deze, na urenlang op het vliegveld te hebben gewacht, gecanceld te zijn. Balen natuurlijk, maar gelukkig werd er een hotel geregeld en konden we de volgende ochtend alsnog terugvliegen. Het hotel was dichtbij het vliegveld en daar aangekomen werden we verrast met tegoedbonnen voor de roomservice. Ik had nog een kater van het stappen de avond ervoor dus die waren meer dan welkom.

Ben lekker op bed geploft en eens rustig op de menukaart gaan kijken waar ik zin in had. Na een lekkere, vette Amerikaanse hamburger met friet gegeten te hebben konden we de volgende ochtend weer wat kiezen en ging ik voor een uitgebreide ontbijt omelet.

Deze was echt heerlijk gemaakt. Het was een dikke omelet met paprika, ui, champignons, hamblokjes en een goede lading gesmolten kaas. Geserveerd met lekker vers, dik gesneden brood. Echt heerlijk.

Sindsdien maak ik deze omelet nog regelmatig als avondmaaltijd. Het is ideaal als je snel iets lekkers, makkelijks en gezonds op tafel wilt zetten. Je snijdt wat groenten, bakt deze aan en voegt wat geklutste eieren toe.

Dit is op zichzelf al lekker en je kunt er, afhankelijk van of je de koolhydraten en vetten kunt gebruiken, natuurlijk ook voor kiezen om nog brood en/of geraspte kaas toe te voegen.

Gezonde omelet maken als ontbijt, lunch of diner

Een maaltijd omelet vind ik sowieso een lekker en makkelijk gerecht om klaar te maken. Je kunt er eindeloos mee variëren en de eieren verbinden de verschillende smaken bijna altijd lekker met elkaar.

Daarnaast kun je een maaltijd omelet zowel als gezond ontbijt, lunch of avondmaaltijd maken en kun je, afhankelijk van het tijdstip, kijken hoe uitgebreid je hem klaarmaakt.

Een omelet is met alleen groenten al lekker en je hebt dan de eieren die voor de eiwitten zorgen, maar je kunt je maaltijd omelet natuurlijk nog eiwitrijker maken door er bijvoorbeeld nog kip, gehakt, tonijn, ham of spek aan toe te voegen.

Recept maaltijd omelet 

Hieronder het recept voor deze maaltijd omelet. Ik heb er deze keer nog wat prei aan toegevoegd omdat dit er prima bij past en het een groente is die ik niet zo vaak eet, maar zo toch ook weer eens binnen krijg.

Als je er brood bij pakt kies dan voor een lekker stevig brood.
Ook zoete aardappel friet is er erg lekker bij.

Recept 1 persoon

Ingrediënten maaltijd omelet

6 eieren
100 gr champignons
½ rode paprika
¼ ui in reepjes
70 gr hamblokjes
geraspte kaas
¼ prei (optioneel)
brood of zoete aardappelfriet (optioneel)

De maaltijd omelet maken

  1. Snijd de champignons in plakjes, de rode paprika in stukjes en de ui in reepjes. Als je er ook prei bij pakt, snijd deze dan over de lengte door het midden en dan in stukjes. Gebruik het witte gedeelte van de prei en maar een klein stuk van het groene gedeelte.
  2. Verhit wat (kokos)olie in een pan en bak hierin de groenten voor circa 10 minuten op middelhoog vuur. Voeg vervolgens de hamblokjes toe.
  3. Kluts in een kommetje de eieren en verdeel dit mengsel over de pan met groenten. Strooi er wat peper en geraspte kaas overheen en bak je maaltijd omelet op middelhoog vuur bruin. Keer eventueel de omelet halverwege door deze met een bord omgekeerd op de koekenpan om te draaien. Of halveer de omelet met je spatel en keer hem dan even om in de pan.

Ps. Met de terugvlucht naar Nederland is het uiteindelijk meer dan goed afgelopen; naast dat alles goed geregeld werd kreeg ik uiteindelijk nog 600(!) euro schadevergoeding. Vrij bizar, maar dat kun je dus claimen o.b.v. het aantal uren dat je vertraging hebt gehad. De vertraging is dus uiteindelijk alleen maar mooi geweest. Een mooi bedrag aan overgehouden en weer een lekker recept erbij.
